This one is a winner, but it takes a little practice. If you hate cottage cheese, but love cheesy eggs and want to add more protein to your breakfast then you have to try these eggs!
Ingredients
2-3 Large eggs (I eat 2, but if you need a bigger breakfast, go 3)
1/3 cup of cottage cheese (I use low-fat small curd from Aldi but any will be fine)
Pinch of salt
Pinch of black pepper
Optional Mix-ins - Spinach, breakfast sausage or bacon, whatever floats your boat
Instructions
- Spray pan with olive oil spray
- Mix eggs, cottage cheese and mix-ins in a bowl and cook on medium heat
- Be patient as it can take a little longer to cook through because of the cottage cheese, put on lower temperature and let it do its thing.
- When finished cooking, they will be softer than normal scrambled eggs, just make sure they are cooked through.
Serve on warm Fiber tortilla (we love Xtreme Fiber) or a high fiber, protein toasted break like Killer Dave's or Aldi's Organic Graintastic bread.
**Note
This also makes a great protein option for a healthy lunch or dinner, but be sure to serve with plenty of vegetables to make it a complete meal. The eggs are delicious without the tortilla and toast so consider those optional!
